Roasted Radishes w/ Ginger Miso Dressing

These roasted radishes have the perfect blend of sweet and salty…an umami flavor that is awesome as a side dish, topper for your salad , or if you’re like me, they don’t make it off the pan before I eat them all!!!

  • 2 bunches red or easter egg radishes
  • 1 tbsp Olive oil
  • Sea salt and pepper to taste

Ginger Miso Dressing

  • 2 tbsp white miso
  • 2 tbsp + 2 tsp lime juice
  • 1 tbsp monk fruit maple syrup OR regular maple syrup
  • 2 tsp soy sauce
  • ½ tsp garlic, very finely minced
  • ½ tsp ginger, very finely minced
  • 1 tsp toasted sesame oil
  • 3 tbsp olive oil
  • Sea salt and pepper to taste

  1. Preheat oven to 400°F. Cut radishes lengthwise and mix with olive oil, salt and pepper and toss to coat.
  2. Transfer mixture to a baking sheet lined with parchment-paper, and roast for 15 minutes or until radishes are browned in spots, which may take up to 30 minutes depending on size. They should be soft when you put a fork in them.
  3. While radishes are roasting make the Ginger Miso Dressing. Whisk all ingredients in a small bowl until smooth and fully incorporated.
  4. When radishes are done, toss in bowl with miso ginger dressing and serve immediately. They are also delicious at room temp so don’t worry if they cool down!!!
