This healthy, dairy-free take on traditional key lime pie is so satisfying and packed with healthy fats, protein and fiber. It has all the taste you remember without the guilt!
Crust
Ingredients:
- 1 cup almonds raw
- ¾ cup pitted dates
- Pinch sea salt
Filling
Ingredients:
- 2 ripe avocados
- ½ cup maple syrup
- ⅓ cup lime juice
- 1 tsp vanilla extract
- ⅛ tsp salt
- ½ cup virgin coconut oil
- Zest of half a lime
Topping
(optional but so good!!!)
Ingredients:
- So Delicious Coco whip or other non-dairy whipped topping
Directions:
- For the crust, pulse all ingredients in a food processor until it forms a coarse meal and begins to stick together. Press into a 9 inch tart or pie pan and refrigerate while making the filling.
- To make the filling, blend the avocados, maple syrup, and coconut oil in a food processor until smooth. Add the lime juice, lime zest, vanilla extract and salt and blend until smooth and creamy.
- Pour the filling into the crust. Refrigerate until firm, at least 2 hours. Serve with whipped topping and enjoy!!!!
