This dressing is so addictive that I’ve literally put it on everything from salads, seafood, chicken or as a dip for raw veggies. It has a beautiful, vibrant green color and truly livens up your entire meal. Because cilantro has so many therapeutic properties, it is a perfect way to get in your daily dose.
Ingredients:
- ¾ cup fresh cilantro
- 1/2 cup water
- 1 clove garlic
- 1/3 cup lemon juice
- ½ tsp sea salt or more to taste
- ¼ tsp pepper
- 1 cup raw cashews
Directions:
- Place all ingredients in a high speed blender and blend until smooth. Add more water if the dressing is too thick.
