Bean-less Beet Hummus

This paleo friendly hummus is light, creamy and delicious. The beets give this dish a beautiful color and its so addictive, you honestly cant stop eating it. Serve with raw veggies and grain free crackers as an appetizer or quick snack. It also makes a great side for grilled chicken.

 

Ingredients:

  • 2 zucchini, peeled and chopped
  • ½ cup steamed beets
  • ¾ cup raw tahini
  • ½ cup fresh lemon juice
  • ¼ cup olive oil 1
  • 1 clove garlic
  • 2 ½ tsp sea salt
  • 1/4 tsp cumin
  • Salt & Pepper to taste

 

Directions:

  1. In a high speed blender, blend all ingredients until thick and smooth. You can thin out with water if necessary.
