These roasted radishes have the perfect blend of sweet and salty…an umami flavor that is awesome as a side dish, topper for your salad , or if you’re like me, they don’t make it off the pan before I eat them all!!!
Ingredients:
- 2 bunches red or easter egg radishes
- 1 tbsp Olive oil
- Sea salt and pepper to taste
Ginger Miso Dressing
Ingredients:
- 2 tbsp white miso
- 2 tbsp + 2 tsp lime juice
- 1 tbsp monk fruit maple syrup OR regular maple syrup
- 2 tsp soy sauce
- ½ tsp garlic, very finely minced
- ½ tsp ginger, very finely minced
- 1 tsp toasted sesame oil
- 3 tbsp olive oil
- Sea salt and pepper to taste
Instructions:
- Preheat oven to 400°F. Cut radishes lengthwise and mix with olive oil, salt and pepper and toss to coat.
- Transfer mixture to a baking sheet lined with parchment-paper, and roast for 15 minutes or until radishes are browned in spots, which may take up to 30 minutes depending on size. They should be soft when you put a fork in them.
- While radishes are roasting make the Ginger Miso Dressing. Whisk all ingredients in a small bowl until smooth and fully incorporated.
- When radishes are done, toss in bowl with miso ginger dressing and serve immediately. They are also delicious at room temp so don’t worry if they cool down!!!
