This paleo friendly hummus is light, creamy and delicious. The beets give this dish a beautiful color and its so addictive, you honestly cant stop eating it. Serve with raw veggies and grain free crackers as an appetizer or quick snack. It also makes a great side for grilled chicken.
Ingredients:
- 2 zucchini, peeled and chopped
- ½ cup steamed beets
- ¾ cup raw tahini
- ½ cup fresh lemon juice
- ¼ cup olive oil 1
- 1 clove garlic
- 2 ½ tsp sea salt
- 1/4 tsp cumin
- Salt & Pepper to taste
Directions:
- In a high speed blender, blend all ingredients until thick and smooth. You can thin out with water if necessary.
